Last week's plan was a bit mixed up:
- I thawed a 6 lb. pork loin and it was ready sooner than I thought it would be.
- I forgot that we had plans to be out of the house one night.
- And I needed a leftover night, not only to use up some stuff that had to get eaten, but also for my own peace of mind. All the extra cooking from the pork loin with a fussy baby, really was getting to me.
I had to rearrange or even omit some of my planned meals. So, if you see them listed here again....no, I'm not serving it again this week, it simply was left off last week!
Also, last week's menu was a bit too much for this new momma! I need to keep it easy this week, especially since none of this week's meals really allow for a leftover night.
Monday~ White Chicken Chili Enchiladas
Tuesday~ Chicken Corn Chowder (recipe coming soon at my other blog)
Wednesday~ French Toast, Sausage Patties
Thursday~ Ham steak, Scalloped Potatoes, Carrots
Friday~ attending a wedding
Saturday~ Cheese Steak Sandwiches, Waffle Fries, Salad
Sunday~ Apple-wood Smoked Turkey Tenderloin, Stuffing, Mashed Potatoes and Green Bean Casserole, Biscuits
