Menu Plan Monday 2012 ~ Week of February 6


Wow!  What a busy weekend!  I think it's going to take me a few days to recover from this one! 

On Saturday, my nieces came over and played with Grace while I got some stuff done around the house!  The biggest chore I accomplished was cleaning Grace's room!  While Cass gave Grace a bath, Lauren and I tore Grace's room apart and gave it a good cleaning!  It's nearly impossible to clean her room, since she likes everything on the floor!  Drives me crazy! 

Sunday, of course, was Super Bowl Sunday!  We usually host this at our house.  We don't have a huge party, but even for a small group, there's always lots of food!  I made a crock pot full of meatballs and sauce (nothing fancy, just frozen meatballs and jarred sauce) and I made two trays of stuffed shells, along with some chips, dips and a veggie tray.  I thought I did okay with not over doing it this year, but we still ended up with a lot of leftovers!  I don't mind.  That will mean a couple of "no cooking nights" for me this week!  :)  Gotta love that! 

Here's what the rest of the week's meals look like: 





  • Chicken Stew.  I'll use the carrots and celery that were leftover from the veggie tray from Sunday in this yummy stew! 




  • Enchiladas.  I have some leftover chicken chili in the freezer that I'll use as enchilada filling.  I've made several meals with that last batch of Crock Pot Chicken Chili.  Besides eating it in chili form over rice, I have made enchiladas with it and also a soup (there were leftovers for those meals, too).  Now, another batch of enchiladas!  I love how we can so many meals from one recipe! 



Aside from trying Debbi's spaghetti squash recipe, I'm keeping it pretty simple this week.  I want to make sure we use up what we can and get the fridge cleared out of all the leftovers.  I'll be organizing and taking inventory of the freezers this week, too, as I'll be starting a list for re-stocking the freezer full of meat next month.  Joe picked up some canned goods last week, so I'll also be organizing the pantry a bit.  Joe started to last weekend, but stopped half way through when Grace needed some daddy time!  I was sad to see that we had quite a bit of expired foods in the pantry.  I mean, REALLY expired foods...we're talking years!  I really need to keep on top of the expiration dates so that doesn't happen again!

I used the bbq flavoring that you gave me in a giveaway for the spaghetti squash. I only had 1/2 cup of BBQ sauce and I was afraid that there wouldn't be enough bbq flavor but it turned out perfect. When I mixed the BBQ and cream cheese, it looked gross but tasted SOOOOOOO good! I hope you like it!
