Easy, Crock-Pot Spinach & Tomato Soup

About 6 years ago, I followed the Weight Watchers diet. I did very well for a while and lost a good amount of weight. After a while my enthusiasm for dieting dropped and I had to stop paying for the program. No sense paying for a plan that I wasn't following.

Before I dropped out of WW, I had accumulated some diet-friendly recipes. The last I checked, the Weight Watchers Community section of the web-site is free for anyone to join. And it's a good source for diet-friendly topics and recipes.

Today I am posting a recipe that I am pretty sure I had gotten from the WW message boards while I was following the program, but from which particular member I don't remember. I do remember the recipe being super easy to make!

I only made this once and we really enjoyed it. Goes great with a salad and nice big chunk of garlic bread!

Spinach & Tomato Soup

Ingredients:
  • 10 oz. baby spinach
  • 2 medium carrots, chopped
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 4 cups chicken broth
  • 28 oz. diced tomatoes
  • 2 bay leaves
  • 1 Tbs. dried basil
  • 1 tsp. dried oregano
  • 1/2 tsp. dried red pepper flakes

Directions:

  • Combine all ingredients in crock-pot.
  • Cover and cook on high for 4 hours.

I told you it was easy!

While we liked this recipe as it is, we both thought that some orzo pasta would be a great addition.

I posted soup this week too ;-) I'd love to try this one, sounds super easy just being able to pop it all in the crock pot. Do you blend it at the end or leave it as is?

Thanks for stopping by and leaving a comment. I also like Kroger brand fruit popsicles-esp. strawberry ones. They are alittle cheaper than Eddy's but I usually shop at Walmart and they only carry Eddy's. But when you need a sweet try one. They are only 80 calories and will satisfy my sweet tooth, which is saying something.

And I do love my Big Sexy Hairspray. We have terrible humidity in Memphis and this hairspray can take it on! You have some great recipes. Thanks for sharing. Blessings.

Denise, it's been a rough week (me and the babe are sick), I havent' gotten a chance to check out your soup recipe yet. I never thought of blending it and the one time I made it I left it as is, but I think I'd like it blended better. Thanks for the idea!!!
