Kitchen Tip Tuesday: Breading Zucchini or Cauliflower


We love fried zucchini and cauliflower! 

When I bread eggplant or chicken, I dip each piece into my egg mixture, then place it onto a plate of bread crumbs and cover and press the breading onto each piece. 

If I were to do that for each small piece of zucchini or cauliflower, I'd be standing there for a very long time.  I don't have that much time, Grace is running all over the place now and my kitchen time is limited. 

Usually, if I am breading smaller items, I pour some bread crumbs into a plastic bowl with a tight fitting lid.  I then take a handful of the zucchini or cauliflower and drop them into the egg mixture, stir them around making sure they are well-coated, then drop them into the bowl of bread crumbs.  I put the lid on and shake it all up.   After I have that handful of veggies breaded, I lay them out on a plate and start breading the next batch.  I repeat those steps until I'm done the breading....then I fry them up.  Mmmmm! 


The other night, I made some fried zucchini.  After slicing up my zucchini into strips, I grabbed my tub of bread crumbs.  I realized that I would most likely use up what was left in that container, so instead of  pouring the crumbs into a bowl, I dropped my egg-coated zucchini into the bread crumb container, put on the lid and shook it all up!  So easy!  And I saved myself from dirtying another dish! 

I'm thinking that I should save a tub or two for future use.  Even oatmeal tubs would work!  It's not really recycling, but at least they will be used or just one more thing before they get thrown away!

GREAT TIP!!!! I usually spray the veggies with pam spray and bake them...but now you've got me craving real fried zucchini. :-)

Clever idea! One of my favorite appetizers at a local restaurant is fried zucchini. They slice them thin and long and fry them very crisp...then they have some kind of cool yogurt dipping sauce.

Man, I'm hungry! And fortunately, I have zucchini on hand to try this out!
